I am looking for a good Yellow Squash Casserole recipe. Does someone have one they wouldn't mind sharing?

Old Family Favorite...
you can adjust as you want...
this is approximate
6 yellow squash--slice, cover with water, cook until tender and drain
add:
1/2 stick margarine or butter
salt & pepper to taste
1/2 cup cracker crumbs
1 egg beaten
3 green onions chopped
3/4 cup shredded cheddar cheese
top with 3/4 cup shredded cheddar cheese
1/2 cup cracker crumbs
Bake in 350 degree oven 30 minuteds until brown and bubbly

I hope you enjoy it as many years as our family has. My mom got it from a noon tv show back in 1963. I never liked squash until this recipe. We all love it. Can't wait for our squash to be big enough (next week) to make some.

WOW, that recipe is old as I am;)!!! Ha, Ha, Ha. The oldies (recipes) are defiitely the goodies though:rockon:!

I have the same recipe and I sometimes switch out and use mozzarella and Ritz crackers.
Now if only I had some home grown squash !
Anyone want to sell some?

Grill sliced squash (any color) tastes great. Just brush with olive oil, salt and pepper and grill each side approx 5 min depending on thickness.....
Make Lasagna with squash (esp patty pan) and nix the noodles for carb free goodies!

Sounds wonderful! Have out of state family coming in and will try these out this weekend!
Does anyone have a good recipe for Spinach Dip by chance for them to snack on while the Brisket is cooking?

The best recipe for spinach dip is on the back of a packet of Liptons (I think) Veggie soup mix.
After you mix it up, you scoop out a round loaf of sour dough bread and fill it up with dip. It's a never fail, attractive presention and the kids love it too!:)

There is this site that has almost any recipe you could ask for. They have simple details and the recipes are all easy to make. I am sure you could find this recipe (or any other recipe for that matter) in www.allrecipes.com.
